Arroz ala Filipina
This recipe is a spin-off from theĀ many Spanish rice dishes. A Filipino-style ArrozĀ de Valenciana.
- 3 T. cooking oil
- 1 tsp. minced garlic
- 1/3 cup chopped onions
- 3/4 cup red tomatoes, chopped or sm can tomato sauce
- 1 lb. chicken, cut up
- 1/2 lb pork loin, sliced
- 1/2 tsp salt
- 2 cups rice, steamed
- 2 cups malagkit (sticky rice) cooked
- 1 cup chicken broth
- 1 green bell pepper, cut in strips
- 1/2 tsp. paprika
- 1 sm box raisins
- 2 hard-boiled eggs, sliced
- 1 sm jar red pimientos
Serves 6-8
- Saute in oil; garlic, onions, tomatoes, chicken, and pork.
- Add salt to taste.
- Add broth and simmer until meats are done.
- Add rice and sticky rice. Cook and turn occasionally to prevent scorching. Do not cover to let off excess moisture.
- Mixture should be almost dry, add bell peppers and paprika.
- Remove from heat after 7 to 10 minutes.
- Serve hot, garnishing it with egg slices and red pimientos.
