Chicken and pasta
Another pasta recipe we just tested if it will taste good and yes it does. Here are the ingredients:
- 1/2 kilo chicken meat chopped into bites size
- 400 gms. spaghetti pasta
- 1 cup corn and carrot mixture (veggie mix can be bought in packs)
- 1 small pack of menudo sauce (approx. 100 gms)
- onion chopped
- minced garlic
- cooking oil
- 1 bell pepper cut into strips
- salt and pepper to taste
- In a sauce pan saute garlic, onion and bell pepper then add the chicken. Add 2 cups of water and simmer until chicken is tender.
- When chicken is already tender, add the uncooked pasta and add another cup of water, continue cooking until al dente. (You may have noticed I did not separate the cooking of pasta, this is because I want it to absorb the flavor of the chicken.)
- Add the mixed veggie (corn and carrot) and menudo sauce, then continue cooking for a few minutes.
- Season with salt and pepper.
Note: Measurements are just guide, you can change it according to your own preference.
Variation: Cheese can be added.

Chicken in mushroom and oyster sauce
Very simple recipe, not a lot of ingredients
- Chicken cut into serving sizes
- 1 can mushroom buttons (cut into halves or sliced thinly)
- 3 tbsp. oyster sauce
- garlic minced
- 1 med. size onion chopped
- cooking oil
- soy sauce and pepper to taste ( as preferred)
- 2 tbsp. cornstarch dissolved in water
*******************************************************
- Saute garlic, onion and chicken
- Add about 2 cups of water, simmer in medium heat until chicken is tender.
- Add the mushroom and oyster sauce, continue cooking for at least 5 minutes
- Add the dissolved cornstarch while stirring to prevent lumps, simmer until creamy.
- Season with soy sauce and pepper.

Chicken Afritada
Chicken is the most diverse when it comes to cooking recipes. So many things you can do with it, fried, barbecue, as soup, or with sauce.
For Chicken Afritada:
- 1 kilo chicken chopped into pieces
- 3 cups potatoes cut into cubes
- 1 cup carrots cut into cubes
- 1 bell pepper cut into strips
- 1 med. onion chopped
- 2 cloves garlic minced
- salt and pepper to taste
- 1 cup milk or all-purpose cream

- Saute garlic, onion, bell pepper and chicken.
- Add 2 to 3 cups water, cover and simmer until chicken is tender.
- When chicken is tender add potatoes, then carrots continue cooking.
- When potatoes and carrots are done, add milk or cream, simmer while stirring occasionally until the sauce become creamy.
- Season with salt and pepper.
Variation: Tomato sauce can be used as substitute to milk or cream.
