Morisqueta Tostada ala Mandarin (Fried Rice Mandarin Style)

Are you tired of your regular fried rice or want to give it some zest and turn it into a complete meal? So this recipe is just right for you. Found this  from an old cookbook and ingredients are readily available and easy to cook too, it’s Morisqueta Tostada ala Mandarin

Morizqueta is a Spanish word for ‘steamed rice‘ while Tostada is a term for ‘fried‘ .

Here are the ingredients:

  •  3 eggs, well-beaten
  • 1/8 tsp each salt and pepper
  • 4 tbsp. peanut or sesame oil
  • 5 cups steam rice or left steamed rice
  • 1 cup finely diced
  • 1/4 c carrots finely diced
  • 1/2 c scallions or green onions, finely chopped
  • 1/2 tsp each sugar and soy sauce
  • 1/2 cup peas, frozen or canned

Procedure:

  1. Beat eggs, cook them slightly moist in 1 tbsp. oil.
  2. Saute in the remaining oil: fluffed-up rice kernels, ham and carrots
  3. Add scallions, sugar, peas and soy sauce. Turn over several times until mixture is lightly browned and ingredients well-blended for about 5 minutes over moderate heat. A minute before serving, mix eggs that had been shredded or cut in narrow strips.

Variations:

  1. To make native fried rice (sinangag), fry 3 cloves of (crushed) garlic before adding rice. Substitute langoniza or Philippine sausage for ham. Shred or diced before adding.
  2. To make Thai rice, add sugar, peas and straw mushrooms. Substitute that soy sauce which is lighter in color and texture for Chinese soy sauce.

Onion & Chives Crackers

Crackers and coffee, this was my usual merienda or afternoon snack. Yes, I know it’s a bit weird talking about coffee (unless iced) in this scorching weather. But this one was taken during one of those rare days when it was raining cats and dogs this summer season where you can wear sidi fusion boots  when you go out of the house and don’t want to get your feet wet.
