Paksiw na Lechon for our lunch

Hubby was invited to his friend’s birthday last Friday and even if it was just a simple celebration, they didn’t forget the Lechon (Roasted Pig) to serve on the table. It was a small gathering of friends where they put up a digitech videoke that everyone had fun singing their hearts out. The food was overflowing and when they were about to go home, each of them were given food to take home (well, it was quite a tradition here in the country). Hubby had a piece of  Lechon to bring home which he turned  into Paksiw na Lechon the next day.

It was an easy procedure as he just sauteed garlic and onion and the left-over pork meat, then added a bottle of  sarsa ng lechon and 1/2 cup of water. Sprinkled with little sugar and seasoned with salt and pepper. He let it simmer until the sauce thickens. And this what we had for lunch yesterday.. :)
