Tochong Bangus [Milkfish w/ black beans]

1 med-size bangus
cooking oil
2 cakes soybean cheese or tahure
2 tbsp fermented black beans (tausi)
1 tbsp vinegar
1 cup water
1 tsp. minced garlic
1 medium size onion chopped
1/2 cup chopped tomatoes
1 thumb size ginger root chopped
salt and pepper to taste

Cut fish crosswise into steaks. Fry till golden brown. Set aside.
Saute garlic, onions, tomatoes and ginger. Add tausi, mashed tahure [soybean cheese], fish, water and vinegar. Cover and simmer for a few minutes. Season to taste.
