Pancit Bihon Gisado

This delicious recipe is always present in the feast table during Birthdays and special occasions. For Filipinos, this dish symbolizes long life because of the long strands of the noodles.

3 tbsp. cooking oil
2 cloves garlic minced
1/2 cup onion sliced
1 cup flaked chicken
1/2 cup chicken liver (optional)
4-6 cups chicken broth
1/4 kilo pork sliced thinly

salt to taste or 1 tsp. fish sauce (patis)
ground pepper
1 cup shredded cabbage
1 carrot cut into sticks 1 sayote cut into sticks
1 cup sweet pea (sitsaro) cut into halves
1/2 cup shrimp shelled and deveined
1 kilo pancit bihon - soaked in water for a few minutes to soften
2 tbsp white sugar
2 tbsp. soy sauce


Saute garlic, onion, chicken, pork and shrimps, add the vegetables then add seasonings and 1 cup of chicken broth, simmer for three minutes. Set aside the solid ingredients and get the flavored liquid and add 3 more cups of broth, bring to a boil, add the the Pancit noodles stir often until most of the liquid is absorbed, add the soy sauce for color, add more broth until noodles are cooked. Add seasoning for taste. Add half of the cooked meat and veggie ingredients to Pancit noodles and mix, then put on top the other half as garnish when serve.
