Pork Sarciado (Pork stewed in Tomato Sauce)

Another Spanish inspired recipe passed on to us and became one of the many traditional Filipino cuisines.


2 tbsp. oil
1 tsp. minced garlic
1 med. white onion chopped
1 cup chopped red tomatoes or small can tomato sauce
1-1/2 lbs. pork chops
salt and pepper to taste
1 cup cubed potatoes
1 small can( or 1/2 cup) peas
1 g sweet red bell pepper
1 cup water

Saute garlic, onions and tomatoes in oil. Add pork and little water, season then cover and simmer until pork is almost done.
Add potatoes and cook for another 15 minutes. Add peas and red pepper. Cook for 5-10 minutes more or until potatoes are done. Add more water as require and stir occasionally.
