Pork Asado (Pork Stew)

Sorry if I haven't post new recipes lately, a little busy blog hopping and visiting friends' blogs.
Today's recipe is Pork Asado, one of the many recipes introduced by the Spaniards to our ancestors. Pork is cooked with condiments and spices.


1-1/2 lbs. pork loin cubed
2 tbsp. cooking oil
1 tsp. minced garlic
2 med. onions sliced
1/2 cup chopped tomatoes
2 tbsp. soy sauce
1 bay leaf, minced
salt and pepper to taste
1 cup cube liver (optional)
1 cup cubed potatoes
1 small can red pimiento, cut into strips

Fry pork pieces until golden brown in medium heat. Set aside. Saute garlic, onions and tomatoes. Add pork, soy sauce and seasonings. Add broth, simmer until meat is tender. Add potato cubes. Add liver and simmer for another 5 minutes. Garnish with red pimientos when serve.

Serves 6-8
