Manok Lechon Kawali

2 3-lb broiler-fryers, cut in halves
1 tsp minced garlic
1 cup flour

1 1/2 cup milk

1 tsp paprika

1 tsp. salt

1/2 tsp black pepper

1/2 cup cooking oil

Prepare 2 bowls, 1 for the milk and another to mix all dry ingredients in. Dip chicken halves in milk first; then dredge in flour mixture. Refrigerate for about 1 hour before pan-frying. This allows coating to harden and dry up a little. Heat oil in a large skillet and brown each chicken pieces lightly on all surfaces for about 15 minutes. Reduce heat and cover skillet tightly to slow cook chicken until tender (about 30-45 minutes). Turn over once during cooking time. Uncover last 15 minutes or longer to re-crisp skin. Variations: Instead of skillet, broil chicken on low heat for about 20-30 minutes in oven.
