Sweet and Sour Pork


1 kilo pork loin, cubed
1 egg well-beaten

1/2 cup flour
1/2 tsp. salt and pepper
1 cup peanut oil or cooking oil

1 tbsp. ginger slivered

3/4 cup broth or stock

1 cup pineapple tidbits

1 cup red and green bell peppers, cubed
1/4 cup vinegar

1/2 cup pineapple juice

1 tbsp. soy sauce
1/2 cup brown sugar
1 tbsp. cornstarch

Mix beaten egg, flour, salt and pepper to make a smooth batter. Roll each pork piece in the flour mixture and fry in hot fat until golden brown.
In a saucepan, mix the broth, vinegar, sugar, pineapple juice and soy sauce, bring to a boil. Add pork pieces and simmer for 10 minutes or until pork is tender. Add cornstarch dissolved in water and cook a few minutes with occasional stirring. Add peppers and pineapple tidbits and continue to cook 3 to 4 minutes more.
