Embotido [ pork meatloaf Filipino style]


1/4 ground pork
1 can vienna sausage chopped
1/2 cup chorizo de bilbao, chopped

2 eggs lightly beaten 2 med. size onions chopped
1 sm box raisins

3 tbsp. sweet pickle relish

2 tbs. catchup
1/4 cup grated cheddar cheese

2 tbsp. cornstarch

2 hard boiled eggs, quartered

salt and pepper to taste

Combine all ingredients, except hard boiled eggs, shape into 2 logs ( 12 in. x 2-1/2 in diameter). Insert eggs in the center of the mixture, wrap in foil or cheese cloth and bake for 350F for 1 hour. Unwrap and cool. Fry all sides until brown. Cool and slice crosswise. Garnish with tomato and cucumber slices, top with catchup.
