Torta [omelet]


Omelet maybe cooked like a roll or log, keep fillings inside or flipped over as a in pancakes in which case fillings are evenly spread on top while cooking first side.

Ingredients:
1/4 kilo lean ground pork
1 cup shrimps shelled and chopped
1 tbsp. cooking oil
2 cloves garlic, minced
1 medium size onion, sliced
1/2 cup tomatoes, chopped
salt and pepper to taste
4 eggs beaten
1 small size potato julienned
1/2 cup raisins
2 bell pepper red and green julienned
1'4 kilo cabbage, finely sliced
oil for frying

Fry ground pork to tender excess fat. Drain and set aside.
Cook shrimps then set aside.
Par-cooked potatoes separately, either in microwave or on top of stove, set aside.
Saute garlic, onions, tomatoes, then add potatoes, raisins, bell peppers and pork. Simmer for ten minutes, mixing ingredients gently. Add cabbage and shrimps and cook for 2 minutes more.
Remove from heat and cool. Before frying omelet, fold in eggs. Mixture maybe divided and fried into individual serving portions.

Variations:
you can use jam or jelly, cheese, onions and tomatoes, potatoes, ham, sausages, corned beef, luncheon meats.
