Lumpiang Sariwa sa Ubod (Fresh Vegetable Springroll)

3 tbsp. oil
1 tsp. minced garlic
1 medium size onion chopped
1/2 kilo ground pork
1 cup shrimp broth
1 cup shrimp meat chopped
4 coconut heart (ubod) julienne
1 cup ground peanuts
3 tbsp. soy sauce
salt and pepper to taste
12 lumpia wrapper
12 lettuce leaves
brown sauce

Saute garlic, onions, pork and shrimps. Add stock and seasoning, simmer until meats are cooked.
Add ubod (coconut heart), peanuts and soy sauce. Add more broth as needed and cook for about 5 minutes. Cool and drain well before wrapping.
Wrap fresh lumpia by laying fresh lettuce leaf on wrapper with 1/3 curly top showing at tip. On leaf bed, put 2 to 3 tbsp. fillings and roll wrapper folding side opposite of leaf end. Serve with lumpia brown sauce.

1/4 cup cornstarch
1/2 cup brown sugar
1/4 cup soy sauce
2 cups water
1 tbsp. minced fresh garlic
Mixed all the ingredients until the cornstarch is dissolve. Simmer while constantly stirring until mixture thickens in a desired consistency then add minced garlic, remove from heat. Serve on top of the Fresh lumpia.
