Creamy Munggo with coconut milk and curry powder (Ginataang Munggo)



I tasted one like these when we went to Palawan, and when I went back to Manila, I told my hubby about it, and he concocted his own recipe.The Palawan recipe had fish and no curry powder, while this one had shrimp and pork and curry powder.
Ingredients:
1 cup monggo beans
1 cup pure coconut milk
10 pcs medium size shrimp
100 gms, pork cut into small sizes
1 medium size onion sliced
3 cloves of garlic minced
1/2 cup of malunggay leaves
1/2 tsp curry powder
1/2 tsp. chili powder (optional)
salt to taste

 Saute the garlic, onion then add the pork, cook the pork until slightly brown then add 1 1/2 cup of water, add the monggo beans, cover the pot, simmer until the monggo is soft and cooked.
When the monggo beans is already cooked add the coconut milk simmer then add the shrimp, stir once in a while to prevent the coconut milk from clumping, when the coconut is already creamy add the curry powder, chili and the malunggay leaves, simmer for a few minutes while stirring  then add salt to taste.

I've never tried mungo with coconut milk. I've always had it only with just the usual mungo beans and pork. I'll have to try this one out.
