Special Menudo (Beef and Pork)




This recipe is my mother's specialty, in every special occasions we have, this dish is always present.

Ingredients:
1/2 kilo tenderloin beef cubed
1/2 kilo pork tenderloin cubed
1/4 beef liver sliced 1/2 inch thick cut to bite size
4 pcs. medium size potatoes cubed
3 pcs carrot cubed
1/2 garbanzos (chick pea) cooked and peeled
1 pc bell pepper diced
1/2 cup raisins
1 medium size onion chopped
2 pcs tomatoes dice
1 big can tomato sauce 500 ml
2 pcs. bay leaf (laurel)
2 tbsp. soy sauce
salt and pepper

Procedure:

In a cooking pot saute beef, pork, onion, bell pepper and tomatoes, with no oil stir until all the vegetable ingredients are cooked
then add 2-3 cups of water, cover and cook in low heat until the meat is tender (note: you can add more water if needed)
When the meat is already tender add the liver, tomato sauce, potato, carrot, raisins and garbanzos, let it simmer and stir occasionally until all the ingredients are tender and the sauce is creamy, add salt and pepper to taste.
