Fish Lumpia (fried springroll)

This one is really easy.

1 cup fish steamed and flaked or you can use canned tuna or mackerel
1 medium size onion chopped
1/4 cup Chinese celery chopped
salt and pepper to taste
1 carrot chopped (optional) as extender

Mixed all the ingredients, and put about 2 tbsp. of fillings to every lumpia wrapper, fold one end covering the fillings then tucked the two sides in then roll tightly, moisten the other end of the wrapper with water to seal. Deep fry until golden brown.
Serve with sweet and sour sauce or vinegar with crushed garlic and salt.

For the sauce: 1 cup water
3 tbsp. catchup,
2 tbsp. white sugar
2 tbsp. cornstarch
pinch of salt
sliced bell pepper(optional)
mixed all the ingredients and cook in low heat, keep stirring until it thicken.

I had the opportunity to eat lumpia that my sister inlaw prepared many years ago. My brother was stationed in Japan and they had a friend who taught my sister inlaw how to prepare them. It was deliciuos. I am going to try your recipe. Thank you for sharing.

This is a great way to disguise fish. My kids are not so fond of eating fish, kaya I often do this. My mom used to bring home ground tuna meat.
