Leche Flan

This Filipino delicious dessert is a regular meal in festivals and Fiestas.


6 chicken eggs yolks
1 duck egg
1 can condensed milk
1 can evaporated milk
lemon(dayap) or calamansi zest
1/2 tsp. vanilla
white sugar


Mix all the ingredients in the mixing bowl
beat with an egg beater until foamy or if no egg beater you can use the fruit blender, after mixing all the ingredients set aside first.
Put the sugar in a tin molder or llanera and put in a low heat fire until the sugar caramelized.
Remove from the heat then put the egg and milk mixture into the molder or llanera, then steam by putting it in a bigger pan with half filled water, then cover, make sure that the water will not reach the small pan or llanera. Place in medium heat, and cook till the mixture is firm, to test if the mixture is already cooked, prick it with a toothpick, if it came out clean then it is already cooked. Let it cool before removing from the moulder,run bread knife on all sides of the flan inside the llanera, then place a big plate on top of the moulder then invert it, put it upside down on the plate then remove the moulder serve with its caramel syrup on top.
